- Sharp Knife
- Cutting board
- Large mixing bowl
- Measuring Cup & Spoons
Ingredients
Dressing Ingredients
- 6 TBSP Balsamic Vinegar
- 4 TBSP Olive Oil
- 2 small garlic cloves (crushed)
- 2 TSP Honey
- Sea salt to taste
Salad Ingredients
- 2 cups quinoa or couscous
- 1 cup chickpeas
- 1 bunch flat leaf parsley
- 1 cup baby spinach
- 1 diced red bell pepper
- 2 diced cucumber
- 1 diced sweet onion
Instructions
- Cook the grains and fluff with fork
- Mix all ingredients together using a whisk (or shake in mason jar)
- Mix everything together in a large bowl.
