Summer Salad

Ingredients
  

Dressing Ingredients
  • 6 TBSP Balsamic Vinegar
  • 4 TBSP Olive Oil
  • 2 small garlic cloves (crushed)
  • 2 TSP Honey
  • Sea salt to taste
Salad Ingredients
  • 2 cups quinoa or couscous
  • 1 cup chickpeas
  • 1 bunch flat leaf parsley
  • 1 cup baby spinach
  • 1 diced red bell pepper
  • 2 diced cucumber
  • 1 diced sweet onion

Equipment

  • Sharp Knife
  • Cutting board
  • Large mixing bowl
  • Measuring Cup & Spoons

Method
 

  1. Cook the grains and fluff with fork
  2. Mix all ingredients together using a whisk (or shake in mason jar)
  3. Mix everything together in a large bowl.
