Cucumber Mint Smoothie “I am Radiant!”
- Vitamix or High Powered blender
- 1 cucumber
- 1/4 cup raw cashews (soaked for at least 1 hour)
- 1/4 cup fresh mint
- 2 cups baby spinach
- 3 cups coconut ice (freeze coconut water in ice cube trays)
- 1 TBSP Lemon Juice
- 1/2 tsp camu powder optional (this has lots of Vitamin C to stimulate collagen production)
- water to desired texture
- Blend all ingredients in blender until smooth.
- Pour into a beautiful glass.
- Drink Slowly
