Superfood Salad
Equipment
- 1 Blender
- 1 Large mixing bowl
Ingredients
SALAD
- 4 cups chopped kale – pull the ribs off roll and cut them into thin ribbons.
- 1 handful of bean sprouts
- 3 cups shredded red cabbage
- 1/2 cup shredded Napa cabbage
- 2 cups shredded carrots
- 1 red pepper cut into thin strips
- 1 yellow pepper cut into thin strips
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/2 cup craisins
- 1 handful bean sprouts
DRESSING
- 3 TBSP creamy peanut butter
- 3 TBSP unseasoned rice vinegar
- 1 TBSP fresh lime juice
- 3 TBSP olive oil
- 1 TBSP soy sauce (gluten free optional)
- 3 TBSP honey
- 1 TBSP brown sugar OR simply use 4-5 TBSP honey
- 1 clove large minced garlic OR 3 small ones
- 1 1/2 inch ginger
- 3/4 tsp sea salt
- 1/2 tsp sesame oil
Instructions
SALAD
- Toss all salad ingredients together
DRESSING
- Blend all dressing ingredients in a blender
