Ingredients
SALAD

chopped kale -
pull the ribs off roll and cut them into thin ribbons.

of bean sprouts

shredded red cabbage

shredded Napa cabbage

shredded carrots

red pepper cut into thin strips

yellow pepper cut into thin strips

cup
pumpkin seeds
1/2
cup
sunflower seeds
1/2
cup
craisins

handful
bean sprouts
DRESSING

TBSP
creamy peanut butter

TBSP
unseasoned rice vinegar

TBSP
fresh lime juice

TBSP
olive oil

soy sauce (gluten free optional)

honey

brown sugar
OR simply use 4-5 TBSP honey

large minced garlic
OR 3 small ones

Instructions
SALAD
Toss all salad ingredients together
DRESSING
Blend all dressing ingredients in a blender
TOSS SALAD & DRESSING TOGETHER
Notes
OPTIONAL ADDITIONS: If you'd like to add high protein vegan noodles (OR any thin noodle), cook about 7-10 oz. Add edamame or whatever bean you like.
