Shitake Dashi
Equipment
- 1 Large Stock Pot
- Stirring Spoon
- Measuring cups & spoons
- Strainer
Ingredients
- 2 cups dried shitakes
- 1/4 cup tamari
- 2 ounces kombu seaweed
- 4 quarts water
Instructions
- Combine the shitakes, tamari, kombu and water in a large stockpot over hight heat.
- Bring to a boil.
- Lower heat to simmer for 20 minutes.
- Remove from heat and let stand for 5 minutes
- Strain, cool and store for use as needed
