Shitake Dashi

Ingredients
  

  • 2 cups dried shitakes
  • 1/4 cup tamari
  • 2 ounces kombu seaweed
  • 4 quarts water

Equipment

  • 1 Large Stock Pot
  • Stirring Spoon
  • Measuring cups & spoons
  • Strainer

Method
 

  1. Combine the shitakes, tamari, kombu and water in a large stockpot over hight heat.
  2. Bring to a boil.
  3. Lower heat to simmer for 20 minutes.
  4. Remove from heat and let stand for 5 minutes
  5. Strain, cool and store for use as needed
