Creamy Avocado Pesto
Ingredients
- 1 large bunch of basil
- 2 ripe avocados
- 1/2 cup of walnuts
- 1 tablespoon lemon juice (optional)
- 3-4 cloves garlic
- 1/2 teaspoon sea salt
- 1/4 cup water
- 1/4 cup extra-virgin olive oil
- ground pepper to taste
Instructions
- Remove basil leaves from stems. Combine all ingredients in food processor and pulse until creamy.
- Serve over pasta or spiraled zucchini for a healthy alternative. Add cherry tomatoes for a pop of flavor and color
