Citrus Dressing
Great over Spring Greens and Roasted Golden Beets
Ingredients
- 1 orange – juiced
- 1/4 Cup olive oil
- 2 lemons – juiced
- 1 tsp mustard (I love Dijon but any will be good)
- salt to taste
- 2 TBSP Shallots diced (optional)
Instructions
- Combine all ingredients in a small bowl and whisk together.
Notes
This dressing can be served with roasted beets, thinly sliced fennel, thinly sliced carrots, watercress, sprouts and topped with toasted sunflower or pumpkin seeds.
