MOROCCAN BEAN STEW
Ingredients
- 1 cup lentils
- 1 onion diced
- 2 cloves garlic minced
- 1 can tomatoes
- 2-3 carrots cubed
- 5 cups vegetable broth
- 1 tsp oregano
- 1 tsp parsley
- 1/4 tsp paprika
- 1 tsp cumin
- 1 tsp coriander
- 1 lemon fresh
- black pepper to taste
Instructions
- Saute onions until translucent, add garlic.
- Add tomatoes and carrots.
- Add lentils and water.
- Add spices.
- Bring to boil, reduce heat and simmer until lentils and vegetables are cooked and tender, season with black pepper.
- If using spinach, add now.
- After serving into bowls squeeze lemon top.
- Take a moment to breath and be present, feel appreciation for your meal and enjoy the flavors.
