Butternut Squash and Cauliflower Mash
Ingredients
- 1 head Garlic, roasted
- 1 tbs Fresh rosemary, chopped
- 1 Butternut squash, peeled, cubed, and steamed
- 1 head Cauliflower, cut into florets
- 2 tbs Butter
- 1 cup Water
Instructions
- Preheat oven to 400 degrees.
- Cut the top of the head of garlic off
- Remove rosemary from stem and chop.
- Cut butternut squash into cubes and cut cauliflower into florets.
- Place the whole head of garlic cut side up onto a piece of aluminum foil. Top with chopped rosemary and olive oil. Tent the foil over the garlic and bake for 30 minutes. Remove and squeeze the roasted garlic cloves out of the skin and scrape the rosemary and oil into a bowl.
- While the garlic is roasting, place steamer insert in a pot with water and add butternut squash and cauliflower. Steam for 12-15 minutes, until very soft. Remove and add to a bowl with roasted garlic.
- Mash the steamed squash and cauliflower, garlic and rosemary, and add in butter. Add water slowly until desired consistency is reached.
