Have you tried including the bounty of fresh local squashes into your holiday meals?

Squash is loaded with health promoting benefits! Squash is loaded with Vitamin C and beta-carotene which help improve eye health. Loaded with antioxidants, eating squash can help prevent cancer. This is because antioxidants play an important role in reducing oxidative stress. It is also important to mention that several squash varieties are rich in Vitamin B6, which can help prevent depression. It has been proven that there is a connection between low Vitamin B6 levels and depression. Fall and winter are great times to head to your local farm stand a pick up a few varieties of squash to try!


Squash is easy to make and inexpensive. Many people are intimidated by making squash but I promise, it is simple and delicious. If you are new to preparing squash or are a lover of French Fries, this recipe is for you! (It is one of my young granddaughter’s favorite foods!)

Try this recipe:

Honey Nut Smile Fries
Ingredients:
3 Honeynut Squashes (or Butternut Squash)
1 tsp. salt
Pepper to taste
1-2 tsp. avocado oil

Directions:
Preheat oven to 425 degrees
Cut squashes in half, scoop out seeds (Save to roast if desired, they make a great snack!).
Slice squash into ½ inch thick slices.
Put squash in a large bowl and add oil, salt, and pepper. Toss together.
Place squash on a cookie sheet, bake for 15 minutes until golden brown, flip and cook for another 15 minutes
Serve with a lean protein and green vegetable such as broccoli for a satisfying, healthy meal
