- Preheat oven to 425 degrees
- Cut squashes in half, scoop out seeds (Save to roast if desired, they make a great snack)
- Slice squash into ½ inch thick slices.
- Put squash in largebowl and add oil, salt, and pepper. Toss together.
- Place squash on cookie sheet, bake for 15 minutes untilgolden brown, flip and cook for another 15 minutes

Serve with a lean protein and green vegetable such as broccoli for a satisfying, healthy meal!
