Ingredients
Method
- Cut chicken into 2 wings, 2 legs, 2 breasts & 2 thighs (or purchase pre cut)
- Peel Potatoes
- Cut Vegetables (peppers, onions & potatoes) - place in large bowl
- Season chicken to taste
- Add seasoned chicken to bowl of vegetables
- Add Olive Oil & Balsamic Vinegar to Chicken and Vegetables
- Toss to combine
- Place all in baking dish
- Add parsley sprigs on top
- Cover with Foil
- Bake @ 350 F for 70-85 minutes
- Uncover and broil for final 5-10 minutes
