Baked Chicken & Roasted Vegetables

This is a great dish that you can switch out any of the vegetables for the vegetables of your choice.
Servings: 4 servings

Ingredients
  

  • 1 whole Chicken cut into pieces
  • 2-3 Whole White Potatoes (4 small/ 3 large)
  • 1 whole Red Pepper large chop
  • 1 whole Green Pepper large chop
  • 1 medium Yellow Onion chopped
  • 1/2 cup Olive Oil
  • 1/4 cup Balsamic Vinegar
Season to Taste
  • Salt
  • Pepper
  • Garlic Powder
  • Rosemary
  • Paprika
  • Parsley Sprigs (optional)

Method
 

  1. Cut chicken into 2 wings, 2 legs, 2 breasts & 2 thighs (or purchase pre cut)
  2. Peel Potatoes
  3. Cut Vegetables (peppers, onions & potatoes) - place in large bowl
  4. Season chicken to taste
  5. Add seasoned chicken to bowl of vegetables
  6. Add Olive Oil & Balsamic Vinegar to Chicken and Vegetables
  7. Toss to combine
  8. Place all in baking dish
  9. Add parsley sprigs on top
  10. Cover with Foil
  11. Bake @ 350 F for 70-85 minutes
  12. Uncover and broil for final 5-10 minutes
