Cucumber Mint Smoothie "I am Radiant!"

While drinking this smoothie take a deep breath and state the affirmation "I AM RADIANT!"

Equipment

  • Vitamix or High Powered blender

Ingredients
  

  • 1 cucumber
  • 1/4 cup raw cashews (soaked for at least 1 hour)
  • 1/4 cup fresh mint
  • 2 cups baby spinach
  • 3 cups coconut ice (freeze coconut water in ice cube trays)
  • 1 TBSP Lemon Juice
  • 1/2 tsp camu powder optional (this has lots of Vitamin C to stimulate collagen production)
  • water to desired texture

Instructions
 

  • Blend all ingredients in blender until smooth.
  • Pour into a beautiful glass.
  • Drink Slowly
