Superfood Salad

Enjoy this delicious salad to gain all the nutrients of superfoods!
Course Salad

Equipment

  • 1 Blender
  • 1 Large mixing bowl

Ingredients
  

SALAD

  • 4 cups chopped kale - pull the ribs off roll and cut them into thin ribbons.
  • 1 handful of bean sprouts
  • 3 cups shredded red cabbage
  • 1/2 cup shredded Napa cabbage
  • 2 cups shredded carrots
  • 1 red pepper cut into thin strips
  • 1 yellow pepper cut into thin strips
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup craisins
  • 1 handful bean sprouts

DRESSING

  • 3 TBSP creamy peanut butter
  • 3 TBSP unseasoned rice vinegar
  • 1 TBSP fresh lime juice
  • 3 TBSP olive oil
  • 1 TBSP soy sauce (gluten free optional)
  • 3 TBSP honey
  • 1 TBSP brown sugar OR simply use 4-5 TBSP honey
  • 1 clove large minced garlic OR 3 small ones
  • 1 1/2 inch ginger
  • 3/4 tsp sea salt
  • 1/2 tsp sesame oil

Instructions
 

SALAD

  • Toss all salad ingredients together

DRESSING

  • Blend all dressing ingredients in a blender

TOSS SALAD & DRESSING TOGETHER

    Notes

    OPTIONAL ADDITIONS: If you'd like to add high protein vegan noodles (OR any thin noodle), cook about 7-10 oz. Add edamame or whatever bean you like.
