Fluffy Millet Breakfast Fruit Cake

Breakfast can be a meal that causes us to get stuck in a rut, where we have the same thing day after day. I love that this recipe uses millet, it's one of my favorite grains. In this recipe, the millet produces a fluffy breakfast treat that tastes good and nourishes your body! You can change the fruit with the season; pears, peaches, and apples work great! This recipe is gluten-free and egg-free but still tastes delicious.

- 3 TBSP Ground Flax Seed
- 1/2 Cup Water
- 1/3 Cup Unsweetened Oat Milk
- 1 TBSP Lemon Juice
- 1/3 Cup Maple Syrup
- 1/4 Cup Avocado Oil
- 2 TSP Vanilla Extract
- 2 TSP Lemon Zest
- 3/4 Cup Dried Millet
- 1 1/2 Cup Almond Flour
- 1 TBSP Baking Powder
- 1/2 TSP Salt
- 2 Pears or other fruit cut into 1/4 inch slices
Cook Millet: add 3/4 cups of millet and 1 1/2 cup of water. Bring to boil and then simmer with lid for 15 minutes (makes 2 1/4 cups of cooked millet)
Blend together ground flax and water. Put in a bowl for 10 minutes.
Combine oat milk, lemon juice, maple syrup, avocado oil, vanilla extract and lemon zest in a large bowl.
Once cooled combine the cooked millet, almond flour, baking powder and salt in a large bowl.
Mix dry ingredients witht the liquid ingredients.
Layer on pears in a "fan like" shape
Cook for 40-50 minutes at 375 degrees
