Ingredients

cup lentils

onion diced

cloves garlic minced

can tomatoes

carrots cubed

cups vegetable broth

tsp oregano

tsp parsley

tsp paprika

tsp cumin

tsp coriander

lemon fresh
black pepper to taste
Instructions
Saute onions until translucent, add garlic.
Add tomatoes and carrots.
Add lentils and water.
Add spices.
Bring to boil, reduce heat and simmer until lentils and vegetables are cooked and tender, season with black pepper.
If using spinach, add now.
After serving into bowls squeeze lemon top.
