MOROCCAN BEAN STEW

Ingredients
  

  • 1 cup lentils
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 can tomatoes
  • 2-3 carrots cubed
  • 5 cups vegetable broth
  • 1 tsp oregano
  • 1 tsp parsley
  • 1/4 tsp paprika
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 lemon fresh
  • black pepper to taste

Instructions
 

  • Saute onions until translucent, add garlic.
  • Add tomatoes and carrots.
  • Add lentils and water.
  • Add spices.
  • Bring to boil, reduce heat and simmer until lentils and vegetables are cooked and tender, season with black pepper.
  • If using spinach, add now.
  • After serving into bowls squeeze lemon top.
  • Take a moment to breath and be present, feel appreciation for your meal and enjoy the flavors.
