Citrus Dressing

Great over Spring Greens and Roasted Golden Beets

  • 1 orange - juiced
  • 1/4 Cup olive oil
  • 2 lemons - juiced
  • 1 tsp mustard (I love Dijon but any will be good)
  • salt to taste
  • 2 TBSP Shallots diced (optional)


  • Combine all ingredients in a small bowl and whisk together.


This dressing can be served with roasted beets, thinly sliced fennel, thinly sliced carrots, watercress, sprouts and topped with toasted sunflower or pumpkin seeds.
